Banana Peanut Overnight Oats

Overnight oats are one of the easiest breakfast options and they can be packed full of flavour and nutrition. If you like banana and peanut butter, lack time in the morning or just want to try something new, then these oats are for you.

In a world where everyone seems to be ‘busy’, it’s nice to take some time back in the mornings and grab your breakfast straight out of the fridge. Wouldn’t you agree?

I’m not sure when the phrase “I’m so busy” became commonplace but it seems that it has become so ingrained in society that we seem to see it as something to be proud of. Work, home duties, social outings, exercise, sport commitments, school.. as we continue to take on more and more commitments in our life it’s no wonder we are constantly struggling to find the time for our wellbeing. So if you’ve stumbled across this recipe because you’re searching for ways to simplify your morning routine, ask yourself whether it’s really a lack of time you’re facing or if it’s actually how you’re spending your time; are you good busy or bad busy?

I’ve chosen this recipe to share because, first and foremost, Banana Peanut Overnight Oats are DELICIOUS. I’m a big banana fan, I’ve made myself clear on my love of peanut butter previously, and I could eat oats every day for a year and not get tired of them. I’m super glad my son loves oats too, so these overnight oats are very family friendly.

Secondly, Banana Peanut Overnight Oats are a time-saver! Why? Because the oats essentially ‘cook’ in the fridge overnight and preparation takes 5 minutes of an evening. Mix everything together, place in the fridge and you’ve got yourself a handy meal for the morning. Better yet, place it in a jar, give it a shake and you’ve got yourself meals on wheels for when you get to the office in the morning.

Thirdly, oats are highly nutritious. Whole oats are a great source of protein and, coupled with their specific type of fibre (beta-glucan), assist in keeping you full for longer. This fibre is also linked to promotion of cardiovascular health as it can lower cholesterol levels. Add in Zinc, magnesium, Iron, Vitamin B1 and their low sugar levels and you’ve got yourself one super-good-for-you grain.

These Banana Peanut Overnight Oats use a simple list of ingredients. This recipe calls for whole rolled oats, not the quick oats kind. I’ve also used plain, unflavoured yoghurt (I make my own) to add to the creaminess. Milk is your choice; it’s delicious with cows milk or oat milk. For the peanut butter, try to choose a natural one with no nasty additives. The same rule goes for the maple syrup. In terms of the ratios I’ve listed, this does result in a thick consistency, so if you open it up in the morning and prefer your oats runny, simply add a dash more milk.

I love to play around with the ingredients in overnight oats and, so far, not much is off-limits! There’s an endless amount of ingredients to experiment with and I hope to bring you more wholesome breakfast ideas in the coming weeks. But for now, these Banana Peanut Overnight Oats are a wonderful start to your morning. Take the time to be present and enjoy them.

Banana Peanut Overnight Oats

Prep: 5 mins Cook: Overnight (but no oven, promise) Serves: 1

Ingredients

  1. 1/2 cup rolled oats

  2. 1/2 cup milk

  3. 1 Tbsp plain yoghurt

  4. 1 Tbsp chia seeds

  5. 1 Tbsp natural peanut butter

  6. 1 Tbsp maple syrup

  7. 1/2 banana, mashed

Method

  1. Place all of the ingredients in a jar and shake to combine.

  2. Leave in the fridge overnight.

  3. Enjoy your nutritious, delicious breakfast.
