Is it just me or is your social media flashing memories of previous tropical holidays out of spite? I swear every day I’m reminded of some amazing snorkeling trip I did, a palm tree lined beach, or some fantastic meal I sat down to eat with an amazing looking cocktail.. Yes, I LOVE a good Pina Colada when on holidays!
Exhibit A – The Cook Islands
As much as I like reminiscing about time well spent in the past, we are in lockdown due to a global pandemic, so probably not great timing. Well, instead of moping in my misery, I decided to get a bit creative during lockdown 2.0 and I came up with these Pina Colada Snack Balls that are DELICIOUS. Hello sunshine in my mouth.
Pina Colada… Snack Balls? Yep. Pineapple coconut creaminess all rolled up in a bite sized snack. They pack a nutrient punch too with tahini, cashews, rolled oats, hemp seeds and chia seeds.
Now, I’ve opted for tahini in these Pina Colada Snack Balls because I just really like the taste of it. In everything. For those not accustomed to tahini, it’s a nutty spread made from crushed sesame seeds. Aside from it’s delicious taste, tahini is full of vitamins and antioxidants, particularly the brain friendly ones. Some studies even suggest that particular compounds in sesame seeds might decrease the risk of degenerative brain diseases..
Not enough to convince you to give it a try? Well, for those not overly fond of tahini I strongly suggest to try this recipe with cashew butter instead. It’ll still provide a delicious Pina Colada taste and will also increase the creaminess of the resulting snack ball.
This is a very simple recipe, with the resulting snack able to be stored in the fridge for a few days. Blitz all the ingredients in a food processor, roll in coconut and voila! Pina Colada Snack Balls for an afternoon delight.. If you’re feeling naughty you can even try adding a dash of rum 😉
This is a great recipe to bring the littlies in on too. Although, if you’re anything like me you’ll end up having to roll them faster and faster to get ahead of the eating. A great tip here; don’t baby wear whilst making these… Ordinarily it should make around 12 balls.

Pina Colada Snack Balls
Prep: 10 mins Cook: 0 mins
Ingredients
1 cup rolled oats
¼ cup dry roasted cashews
¼ cup tahini or cashew butter
½ cup dessicated coconut, plus more for rolling
1 Tbs hemp seeds
1 tsp chia seeds
¼ cup unsweetened pineapple juice
1 tsp lime zest (lemon if you don’t have limes)
1 Tbs honey
Method
Place all ingredients in to a food processor and blitz until it comes together and there are no large cashew pieces.
Scoop out a teaspoon full at a time and roll in to a ball with your hands. Roll in coconut before placing in a container.
