Pumpkin and Peanut Butter.. in a muffin!

Yep, you read that right, pumpkin and peanut butter muffins. These little beauties are delicious, full of protein and have the added bonus of containing a vegetable. A winner for the whole family!

Peanut butter is a family favourite in our household. We’ve tried and tested quite a lot of different brands over the years and settled on some favourites but, out of curiosity, I’d love to know what your favourites are in the comments.

For the sake of this recipe, opt for a smooth variety of peanut butter with no added sugar or salt. Depending on where you’re shopping there should be quite a lot of choice these days. Here’s some examples to get you started.. <<< >>>

My son Levi tends to like bread, A LOT, so a friend of mine suggested veggie muffins one day! And then I came across a recipe incorporating almond butter and pumpkin as base ingredients for a toddler friendly mini-muffin… and I thought it was a brilliant way to get some protein and vegetables in to my son’s muffin obsession. Check out her recipe here if you’d like to give that a go too. I never have almond butter on hand, so I tweaked the recipe a bit with ingredients we always have in the cupboard and I got the below recipe.

Fun fact about peanuts – they’re actually a type of pea and come from the legume family! Lots of research has been done on the benefits of peanuts in recent years. Whilst, yes, they are high in fat, this primarily consists of monounsaturated fatty acids which has been associated with a reduction in the risk of heart disease. They are also high in protein, contain all 20 amino acids, are low GI and pack a punch when it comes to Vitamins. Okay, so I think you can see why I got excited when my non-meat eating son decided he liked these muffins (hellooo protein!). Easy to whip up, freezable and great lunch box additions. It’s also a great way to introduce your little one to baking.

It is a bit of a weird muffin batter, so please try to refrain from adding extra flour! I promise it still cooks to produce a muffin. I’ve included evidence in the image below 😉

Peanut Butter Pumpkin Muffins

Prep: 10 mins Cook: 20 mins

Ingredients

  1. 3 large free range eggs

  2. 3/4 cup peanut butter

  3. 1 heaped tablespoon honey

  4. 1/2 cup pumpkin puree

  5. 3 tablespoons rice bran oil

  6. 1 teaspoon vanilla extract

  7. 1/4 cup plain flour

  8. 1 teaspoon cinnamon

  9. 1 1/2 teaspoons baking powder

Method

  1. Preheat oven to 180 C and grease a muffin tin with nonstick spray or silicon liners.

  2. Add the first 6 ingredients to a mixing bowl and lightly whisk with a fork to thoroughly combine.

  3. Add the remaining ingredients and mix briefly with a spoon. Try not to overmix, but make sure everything is incorporated.

  4. Spoon the batter into a standard muffin tin. It should fill 11-12 (I opt for 11).

  5. Bake for 18-20 minutes, or until the muffins spring back when touched on top. Allow to cool in muffin pan for 5 minutes before removing and sitting on a wire rack.

  6. Store in an airtight container in the fridge for up to 3 days.

Notes

  1. I steamed the pumpkin before blitzing it down to a puree. I find boiling retains too much liquid. Butternut pumpkin works best for this.

  2. Runny honey will incorporate better in to the batter. If your honey has hardened, just melt it down in the microwave for 5-10 seconds before adding.

  3. You can use maple syrup instead of honey if you prefer. Add more or less for personal preference. We use honey as we have bee hives in the backyard 😉

  4. I sometimes substitute 1/4 cup of the peanut butter with tahini for an extra nutrient hit
