I have been dreaming about creating a blog for a while now and I’ve finally decided to give it a go! So here’s a little about why…
This year was meant to be a good year for many, including me. After spending 15 months at home with my beautiful son, I began the year by starting a new job. As I’m sure many mother’s could relate, this was a big step for me. On one hand I didn’t want to leave my son.. but on the other hand I really wanted to keep my career moving and desperately needed to challenge my mind in a different way. After a bit of juggling, we got in to a great routine with work, daycare drop-offs and home life… and then COVID-19 hit Australia. Goodbye job.
After the initial shock of losing my job and facing a global pandemic wore off, for me, lockdown 1.0 wasn’t actually too bad. I got to appreciate my time that I spent with my son. We got in to another great routine of running in the morning (Levi loves snacks in the pram 😉 ), playing, eating, relaxing, playing, eating, eating and eating. Then I broke my toe and I found my love of cooking again.
Cooking is my creative outlet. I’m not talented artistically in general, but when it comes to cooking I find my ‘flow’. And with a picky toddler, I get to try new and exciting recipes. I want my son to be exposed to lots of foods, to enjoy different tastes and textures.. I understand now that toddler’s are FUSSY! And that’s okay. Yes, it’s frustrating some days but I’m not going to let that stop me. Because I enjoy the process of creating food. I’m hoping one day he will eventually appreciate food as much as his parents do! But for now, I’d love to share some recipes that are ‘Levi approved’, yummy and nutritious for anyone out there struggling for inspiration during lockdown 2.0 and beyond.
